Food Lovers Fat Loss Sweet Dessert Recipe

Pumpkin Creamy Custard a la Mode Recipe

Ingredients:

  • 1 (12 oz) can fat-free evaporated milk
  • 1 cup egg whites or egg substitutes
  • 1 (15 oz) can solid pack pumpkin (not pie filling)
  • 1/3 cup of evaporated cane juice or sucanut sugar
  • 1 ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 5 cups hot water
  • 1 ½ cups vanilla frozen yogurt, soy or fat free ice cream
  • Non stick cooking spray

Method:

Preheat oven to 325F. Lightly spray 13x9x2-inch baking pan or glass baking dish with non-stick cooking spray.

Heat milk in small saucepan for about 5 minutes or until hot. Be sure not to bring to boil. Then remove from heat.

In a medium bowl, using an electric mixer beat the egg whites or egg substitutes for about a minute on medium speed. Then add pumpkin, vanilla, cinnamon, sugar and nutmeg. Beat for a minute. Then pour into custard cups.

Now pour the hot water into the baking pan. Be sure to keep water out of custard cups.

Bake for about 40 minutes or until a knife inserted in the center of custard comes out clean. When done baking, remove from oven. Once you remove custard cups, put plastic wrap on each custard. Let cool and refrigerate for at least 1 hour.

When serving, top each custard with a ¼ cup scoop of your choice of ice cream. Serve immediately.

Serves: 6

Approximate nutrition breakdown per serving: 176 calories (9.5 grams of protein, 28.3 grams of carbohydrates, 1.8 grams of fat, 2.5 grams of fiber)
