Food Lovers Fat Loss Potato Gratin with Chives and Cheese

Ingredients:

  • 2 ½ lbs. Red Potatoes, peeled and sliced into 1/8-inch rounds
  • 2 cups Silk Soy milk or non-fat milk
  • ¼ cup grated Parmesan cheese, divided
  • 2 garlic gloves, minced (about 2 tsp)
  • 3 TBSP Light Smart Balance Buttery Spread, softened
  • ½ cup finely chopped chives, divided
  • 1 tsp salt
  • Pepper, to taste
  • ¼ tsp cinnamon, to taste
  • ¼ tsp nutmeg
  • 2 tsp truffle oil (optional)
  • Non stick cooking spray

Method:

Preheat oven to 425 degrees F.

Peel and slice potatoes 1/8” thick – easily done in a food processor.

Lightly and evening coat a 9x13-inch baking dish with non stick cooking spray.

In a small bowl, fold garlic into softened butter and spread most of the garlic butter on bottom of dish.

Now layer in half the sliced potatoes and sprinkle half the cheese and chives evenly, season with salt and pepper. Then layer the remaining potato slices on top and season with pepper.

Whisk the milk with nutmeg and pour over potatoes. Dot the rest of the garlic butter evenly on top. Cover with foil and bake for 30 minutes.

Remove foil, sprinkle remaining cheese and bake for another 30 to 40 minutes, or until browned and most of liquid has been absorbed.

Remove from oven, sprinkle remaining chives and drizzle with truffle oil.

Serves: 8

Approximate nutrition breakdown per serving: 175 (7.2 grams of protein, 24.82 grams of carbohydrates, 5 grams of fat, 2.7 grams of fiber)
