Fattoush--Lebanese Style
Feb 8, 2007 I owe my love of fattoush to my Lebanese friend, Amani. Though the salad may have varying ingredients, this is the traditional taste of fattoush in her home. It is also known as 'bread salad' in the USA. MORE ON NUTRITION
Fattoush
Chop into small pieces and place in a large salad bowl:
1/8 C red pepper
1/8 C green pepper
1/8 C radish (any type)
1/8 C English cucumber, or seeded traditional cukes
1/8 C red, vidalia, or other sweet onion
1/4 C tomato
Mash and add: 1 garlic clove
Thinly slice and add:
1C romaine lettuce
1/2 C green cabbage
Top with minced fresh herbs:
1T each mint, cilantro, parsley
Toast in oven or fry in olive oil:
1 pita opened, split in half and cut into 1-2" squares
Dressing--Mix separately in a bowl:
1/2t salt, pepper to taste
1/4 C extra virgin olive oil
1/8 C red wine vinegar
Just before serving add the toasted bread squares and dressing. Toss well.
